The layers of scents in Tahitian vanilla include an overarching sweetness, blended with a floral middle note and supported by a subtle undertone of anise and cherry.
I scraped each bean by hand and macerated both the precious insides and bean husks in 95% ethanol and let it infuse for weeks, and the result is a sweet and complex liquor with a lot of depth.
This current batch was started in 11/2022. As I begin a new one in 3/2023, half of this (limited!) batch will go to the evaporation stage. Then, it will slowly become a sensuous, syrupy oleoresin and be available (in extremely limited quantities) for purchase.
